20 Autumn Wines, Eric Asimov Spain produces an ocean of cheap cava, the sparkling wine guzzled throughout the country. Much of it is forgettable, but this pale rosé is elegant, nuanced and fresh, with balanced, persistent flavors.
Wall Street Journal, Friday June 22, "Selling cava in the city" by Lettie Teague "his aim is to make more than just the greatest cava (the sparkling wine of Spain); he wants to produce "the best high-mineral-content sparkling wine in the world", and yes, that includes Champagne.
